This recipe is a winner, not that you could ever really go wrong with avocado. Still, it is not your typical guacamole application! It will impress your guests, or frankly, just be a treat for yourself!

Yummy avocado fries with curry yogurt dipping sauce.

Avocado “Fries” with Curry Garlic Yogurt

Ingredients:

Coconut oil or olive oil for coating the baking sheet
1/4 cup whole wheat flour (I like whole wheat pastry flour)
2 large eggs, beaten
1-1/2 cups whole grain or gluten-free breadcrumbs
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-inch wedges
Salt to taste
Grated Parmesan for serving (optional)

Makes about 3-4 servings

Directions:

Preheat oven to 450.

Place the flour, egg and breadcrumbs in separate bowls. Coat avocado slices in the flour, then egg, then the breadcrumbs. Coat a baking sheet with coconut oil or olive oil and lay the slices evenly down on one of the flat sides. Sprinkle with salt, then bake for about 20 minutes, or until they are golden brown and looking crispy.

Remove from oven, sprinkle with salt and serve immediately with garlic yogurt sauce or with a squeeze of lemon.

 

Curry Garlic Yogurt

Ingredients:

1/3 cup whole Greek Yogurt
2  cloves garlic, finely chopped
2 teaspoons curry powder
1 Tablespoon red wine vinegar
A dash of cayenne
Salt to taste

Mix all ingredients in a small bowl. Taste and adjust seasoning if necessary.
