amber food 002-1Quick Black Bean Sliders with Cilantro Sauce

1/2 cup rolled oats
2 teaspoons cumin
2 teaspoons chili powder
3 large cloves garlic
2 large scallions, roughly chopped
A small handful cilantro leaves and stems
1/2 large red bell pepper, roughly chopped
1-1/2 cups cooked black beans, divided
1 large farm egg or flax egg*
Salt and pepper to taste
Coconut oil as needed for cooking

Makes 8 medium patties (4 servings)

Place the all the oats and spices in the food processor fitted with an “S” blade and pulse until turned into a coarse powder. Transfer to a mixing bowl and set aside.

Place the garlic, scallions, cilantro, bell pepper and half the black beans and pulse until well broken down but not pureed. Transfer to the bowl with the oats and add the egg and remaining beans and season with salt and pepper. Taste and adjust seasoning if necessary. The mixture will be moist. Allow the mixture to sit for 10 minutes for the oats to absorb some of the moisture.

Heat a large non-stick sauté pan on medium heat and add a light coating of coconut oil. Form the burger mixture into 8 equal sized balls and flatten into patties about 3 inches across and 1 inch thick and drop into the pan as you go.

Cook until brown, and firm to the touch; about 4-5 minutes per side. You can make them double the size but you will need to cook them for another 2 minutes on each side. Serve as a patty on it’s own or on a whole grain bun with accompaniments.

Tips & Notes~

*Make a Flax Egg; mix 1 Tablespoon group flax seeds with 3 tablespoons filtered water. Allow the mixture to sit for 5 minutes to thicken and use in place of the egg. This works for many recipes calling for eggs.

 

For the Cilantro Sauce

Yields about 1 cup, or 16 Tablespoons

1/2 packed cup roughly chopped cilantro leaves and stems
2 large scallions, bottoms removed and roughly chopped
1 large clove garlic
1/3 cup coconut milk (full fat)
1 Tablespoon olive oil
Juice of half a lemon
A few slices of jalapeño (optional)
A good pinch of salt

Place all ingredients into the blender and blend on high until smooth. Taste and adjust salt and lemon if necessary.
