An Evening with Al Gore

On September 27th, 2015 The Naked Bite catered a meal for former Vice President Al Gore and The Climate Reality Project. This event was a fundraiser devoted to solving our climate crisis and was entirely plant-based. The evening began with passed hors d’oeuvres and was followed by a three course meal and compelling speech given my Mr. Gore. He spoke about what is happening with climate change and what we can do to help. I was even asked unexpectedly to give my own speech about The Naked Bite and the inspiration for the meal. Being that it is late summer in South Florida, the seasonal produce pickings are slim, but I was committed to sourcing as local as possible. Of course, highlighting the integrity of plants and how easy it is to substitute for meat in some of your weekly meals.

This was such an honor to be selected for such a special evening and to have the opportunity to showcase the type of food that really inspires me. The impact that we are able to have on the planet by making event small adjustments to our diet is incredible. This is a huge reason why I am committed to help changing peoples diets, one NAKED bite at a time!

The Naked Truth: Clearing the Way

Green bodyThese few weeks have been about getting sh#t done, checkin’ off the list and clearing way for the new. We have new and talented staff, the car has been detailed, manuals made, office cleaned, folders created and we are putting plans into action. Clearing the way @theNAKEDbite made me feel like I should do the same for my body. 

Questionable eating habits, toxins and compromised digestion (many of us have without knowing it) and stress can contribute greatly to lack of energy, motivation, depression etc.  Though I am healthy over all, you know I have my vices and my treats (chips & guac, margaritas, ice cream :).  I committed to doing a two week food and liver cleanse simultaneously (eeek!).

Spicy Southwestern Kelp Noodles with Avocado & Toasted Seeds

Raise your hand if you love noodles. I DO, I DO!!! Unfortunately they tend to be on the heavy side and often carry the “guilt factor”.  I prefer not to associate guilt with food but you know what I andoaean.

Kelp noodles are as light as light can be. They are made 100% with seaweed and water and have 6 calories per serving…”light” done right, au natural! The only thing is that they need some “umpf” injected into them as they rate 0 on the flavor scale.

I love to use peanut sauce, pesto, tomato sauce– you name it. I have been on a veggie and fruit cleanse the last couple of weeks (and liver cleanse to boot = no fun). Pretty much any kind of dressing will do. This Southwestern Kelp Noodle Salad recipe is one  I created to inspire my tastebuds & carry on. Check it out!

Forward Movement: You never know

Last month, I received an email from a major brand that came as quite a pleasant surprise but also had me questioning, “What could a quick-service chain restaurant and TNB possibly have in common?” I clicked on the email from Chipotle. It turns out that I knew they were “doing good” but I didn’t realize how good until they sent me a list of high-quality ingredients they use and local growers from whom they source.

It’s inspiring to see such large organizations committed to health and sustainability, so many companies are going this route nowadays, YIPPEEE! Chipotle is certainly leading the pack in the “fast food” and “quick service” communities, turning that old reputation on it’s ear. Chipotle is committed to cultivating a better world by buying locally grown produce from growers who prioritize the long-term health of their land, meat from healthy livestock who have had space to move- and more. They also take this into the workplace with their employee incentive programs and community-based projects.
We’ll continue to bring you information on eateries and makers that are, well… theNAKEDbite approved. You know us, you trust us… and we need an excuse to get out a little more. 😉

The NAKED Truth, August 2015

Change is inevitable, and can be quite scary. The good news is that more often than not (quite possibly 99.9% of the time) it brings progress, rebirth, wisdom and something ultimately way better than what you had before. The discomfort that change brings give us great power to grow and create, instead of being stuck in the same place. I have experienced so much change in the last year, most of it in my personal life and much of it incredibly difficult. Thankfully even through the changes and challenges, I could see the wisdom and the bigger picture. This helped me trust that all would be alright, and guess what, things now are so much better than ever!

Some changes have been afoot in The NAKED Bite world also. I go back and fourth between embracing and resisting them. The truth of the matter is that I have resisted Miami since the day I got here. read more…

Pasta with Creamy Avocado Garlic Sauce

manWho doesn’t love avocado? I could eat guacamole until I burst (with a side of margarita of course ;). Enjoy the fruit’s heart-healthy fats in this satisfying, creamy sauce that is a snap to make. Toss it with your favorite pasta/noodles, or, even into a rice based dish for a creamy, risotto-like mouthfeel. I use the lighter Florida variety of avocados from my favorite fruit farm, LNB Groves, but the rich haas variety work just as well!

Quick Black Bean Sliders with Cilantro Sauce

1/2 cup rolled oats
2 teaspoons cumin
2 teaspoons chili powder
3 large cloves garlic
2 large scallions, roughly chopped
A small handful cilantro leaves and stems
1/2 large red bell pepper, roughly chopped
1-1/2 cups cooked black beans, divided
1 large farm egg or flax egg*
Salt and pepper to taste
